Black Truffle Prime Rib with Caramelized Onions

Fire-grilled steak with truffle salt and potatoes

Take a juicy Prime Rib up a step to absolute gastronomic heaven with Amola Black Truffle Salt. The rich flavours of black truffle take any cut of meat to a whole new level of deliciousness. If you don’t have a grill, you can cook the steak on a cast-iron pan over high heat, with a little oil to keep it from sticking.

Ingredients

  • 3 Tbsp animal fat or butter
  • 3 small onions, thinly sliced
  • Amola Black Truffle Salt
  • Freshly cracked black pepper
  • 3lbs Prime Rib

Method

In a large skillet over medium-low heat, melt the fat or butter. Add the onions and cook, stirring occasionally, until caramelized. This might take up to an hour.

Heat a grill to medium and cook the steak until the outside is blackened and the internal temperature is 140°F for medium-rare, about 1 hour. Let rest, then season the steak with Amola Black Truffle Salt and pepper, and serve with the caramelized onions and a side of “Magic Fat” Potatoes, topped with a sprig or two of fresh thyme.
